Customer Rating:      Summary: No Calorie count Comment: The cookbooks looks good but I was disappointed that there's no calorie count for the recipes. This is supposed to be a "cooking light" cookbook.
Customer Rating:      Summary: Unique and healthy cookbook Comment: Susie Fishbein has done a tremendous service by creating a book of healthy and nutritious dishes. Hundreds of thousands of people die every year in the US annually due to issues that are related to their diet; be it heart disease, obesity, diabetes and more. While her intent was to write a cook book, Fishbein might be a lifesaver also. "Kosher by Design Lightens Up" has page after page of delicious, nutritional, aesthetically pleasing dishes, each with a beautiful color photo.
"Lightens Up" is described as having easy-to-do recipes; I, whom nobody would hesitate to call a culinary novice, found this to be true. I generally find it difficult to make a dish with more than 6 ingredients--`For Dummies Fabulous Food for a Healthier Lifestyle' is more likely to be found on my theoretical shelf than, say, something off gourmet.com or by Wolfgang Puck. But Fishbein's latest book works for both experienced chefs and the culinary challenged.
As to the recipes, I chose to make the Roasted Red Onions. While my results did not match the beauty of the picture in the cookbook, it did taste good. My wife made the Curry Chicken, which the entire family enjoyed greatly.
While similar cookbooks often take tried and true recipes like meat loaf and make them healthy, "Kosher by Design Lightens Up" has original recipes that you can't find in any other cook book.
"Kosher by Design Lightens Up" is a mouthwatering book, both for the cook and for those that will be eating the delicious meals.

I am already a big fan of Susie Fishbein's cookbooks and I'm glad to say that her latest one, Kosher By Design Lightens Up, does not disappoint. You definitely don't need to be kosher to appreciate these recipes however I do keep a kosher home so this book was especially practical for me.
For starters, the colorful photographs alone are beautiful and looked very appetizing! The recipes are all very healthy, as promised, but most importantly their taste is not compromised because of it. All recipes that were attempted turned out really well, such as the wheat germ crusted chicken cutlets and the teriyaki butternut squash rounds.
The book includes a great deal of helpful information about nutrition. There is a section that explains supermarket labels, another with clear definitions of food-related items and even a chart listing superfoods with their properties and health benefits. I also really liked the section describing gadgets for healthy cooking. There was clearly a lot of research done for this book which I really appreciated. Another fun part of the book is the ideas provided for entertaining, such as hosting a tasting party and having a spritzer bar.
My mom also loved the cookbook and here are some of her thoughts on it:

The only problem that I had with the recipes was that many of them have nuts, which I needed to try to find substitutes for because there is a nut allergy in the family. Asides from that I really enjoyed this book's recipes and all of the valuable nutritional information provided.

Customer Rating:      Summary: Not your Bubbe's Kosher Cookbook! Comment: This is NOT your Bubbe's (grandmother's) kosher cookbook. My grandmother actually didn't even cook much (though she kept kosher. Her repertoire was salmon, lamb and that's about it.) My mom, however, is a great cook and her food ranges from brisket, to lockschen kugel (noodle pudding) to some very interesting matzoh dishes for Passover.
This book is different as it chooses dishes from the Sephardic tradition, which is more Mediterranean, and from all over the world as well as the new-age vegetarian (but not vegan, necessarily) tradition.
The recipes attempt to lighten up the very heavy emphasis on animal fats and sugars found in traditional Jewish foods that came out of Eastern Europe, where it was feast or famine. These foods are ones you will recognize, such as Roast Beef Deli Roll sandwich, but they have a healthy twist, such as a sweet potato-turkey version (very luscious and great idea for leftovers from Thanksgiving, if you have sliced white meat.)
There are many recipes you won't recognize as kosher cuisine, like an ice cream pumpkin frozen pie. tacos, and Hawaiian Veal Roast (looking like ham and pineapple.) All the recipes are lavishly photographed and look utterly tempting.
The book would be good for anyone who wants to cook kosher (so the ingredients don't violate the kashruth rules and they indicate dairy, meat or pareve--neutral.) The recipes are from all over the world, and twists on favorites like tacos, so if you like to cook kosher but want a cookbook with more adventuresome ideas that doesn't require you to edit out milk or pork or shellfish, this is just great. A beautiful book.
Customer Rating:      Summary: The Outcomes Are Simply Scrumptious Comment: Fishbein does it again - produces an award-winning kosher cookbook. This hardback oversized book opens flat so that the beautifully designed recipes can be easily viewed. There are over 145 recipes including nearly 175 photos of delicious dishes, colorfully dressed tables, along with healthy cooking tidbits and gadgets. The definitions, food substitutes, and ideas for entertaining make this cookbook universal - a great addition for any kitchen. Many of these recipes have 10 or more ingredients and the preparations are elaborate for this working mom. However, the outcomes are simply scrumptious (I've been complimented on every dish I've prepared so far).
Thanks Susie for giving us the ideas on how to lighten up recipes. The comparison of old school to the new light version kosher is simple to apply to other dishes. The everyday cook can follow this guide to prepare gourmet dishes. This is a great book for kosher cooks but easy to transfer to non-kosher kitchens as well.
